Domaine Gauffroy, emerging talent

All Gauffroy wines are 'handmade'. The wines do not receive any additional treatments. Fermentation is spontaneous and no enzymes are added. New wood is used sparingly, alongside older barrels. The wine is given all the time it needs to develop.
The aim is to make terroir-typical wine in the Burgundian tradition.
Nicolas Gauffroy is now the 3rd generation 'chef' and works with his parents and good friends. His white wines are classically fresh, with a lot of aging potential .

Interesting
