Domaine Gauffroy and the Hautes Côtes de Beaune
This white wine 'Les Crais' comes from 30 year old Chardonnay vines. The limestone soils in the higher hills of the Hautes Côtes de Beaune are comparable to those of Meursault. Due to climate change, these higher and therefore cooler vineyards are becoming increasingly interesting.
The wine 'Les Crais' undergoes the same vinification and maturation as the Gauffroy wines from Meursault. At least 12 months maturation in wood, of which 15% new. Bâtonnage (stirring the lees , the dead yeast cells, with a bâton - stick) ensures rounder.
