A&M Tissot, Crémant Blanc de Noirs, Jura. Stéphane Tissot also makes a biodynamic Crémant Blanc de Noirs from 100% Pinot Noir. Fine mousse, spicy aromas, apple and pear. Also hazelnut, cherry, and orange zest. Delicate bitters and mineral notes make this unmistakably Pinot Noir. Unfiltered, dosage-free, and sulfite-free. A unique glass with plenty of volume and aromas, so much excitement. Goosebumps!

Crémant Blanc de Noirs, harvest and vinification

Blanc de Noirs (white from black) is a white wine made from red grapes. Pinot Noir has a thin skin, so it doesn't release much color. Very gentle pressing produces white juice. This is fermented just like a white wine, without the grapes.

Hand-harvested in small crates. The base wine is aged for five months in 228-liter oak barrels (1/3 new), unfined, unfiltered, and without added sulfites. Traditional method , meaning a second fermentation in the bottle. A further two years of aging are done in the bottle sur lattes (on the slats). No dosage is added during disgorging, making this a Brut Nature .

The soil is primarily limestone from the Bajocian (Middle Jurassic, 170 million years old) and even older clay from the Triassic. The vines are on average 25 years old. The vineyards are farmed biodynamically, meaning without herbicides, chemical fertilizers, or synthetic products.
