Chasselas, is that something?

Chasselas is primarily found in Alsace, Baden (as Gutedel), and Switzerland (as Fendant). It typically produces neutral wines. But as you see with Macabeo and Trebbiano, in the right hands, Chasselas produces stunningly beautiful wine. The appellation within the Savoie is called IGP Vin des Allobroges . Remember that?

The Vines of Paradise

Winemaker Dominique Lucas of Les Vignes de Paradis—name is omen—cultivates his 12 hectares of beautifully situated vineyards in the cooler, western climate using biodynamic methods . The poor soil of glacial moraines (moraine, granite) with abundant calcareous sandstone produces magnificent fruit.

Perfectly ripe grapes

The grapes are harvested in stages (tries), always at perfect ripeness. This white wine from vineyards near Crèpy also comes from the best, oldest vines with low yields. The juice ferments and ages for six months in egg-shaped concrete vats.
These concrete vats are becoming increasingly common these days. They allow some air to pass through, don't impart flavor (as wood does), and their shape is said to create an internal fluid dynamic that produces a more beautiful wine. And that's taken into account.

Taste
This Chasselas has a delicate nose but also immediately reveals its power. It starts subtly minerally but then opens beautifully with tension, sublime acidity, and bitterness. Stone fruit and wet stone. Long!

Delicious with
Whitefish, charcuterie, vegetable dishes with chicory, artichoke, fennel, asparagus, kale, savory, chervil.

Interesting
Chasselas isn't exactly known for its interesting wines. In Alsace, it's even banned from cultivation. But in the right hands, it produces stunningly beautiful wines. Like this one.
