Fleur de Savagnin 'En Chalasse', Labet, Côtes du Jura Blanc. The 2023 Fleur de Savagnin from Domaine Labet is one of the most sought-after and iconic white wines from the Jura. With this wine, the Labet siblings offer their own interpretation of traditional Savagnin, the flagship grape variety of the Jura wine region.

On the palate, the wine provides a fascinating contrast. The entry is full and almost buttery, but is immediately balanced by taut acidity and an almost saline, mineral taste. The finish is exceptionally long and taut.

The taste is full and persistent, with a remarkable freshness that provides balance. This wine is suitable for cellaring, but is drinkable now, paired with regional specialties.

Fleur de Savagnin, iconic wine from 5 micro-plots

This cuvée from Labet is composed of 55% Savagnin Vert and Gros Vert and 45% Savagnin Jaune grapes from five historic micro-plots. The vines were planted between 1947 and 2016. The soil consists of clay and Lias blue marl. This gives the wine its distinct, deep minerality. The vines grow on a south-facing slope at an altitude of approximately 240 meters.

The 'Fleur de…' line represents an ouillé-style wine. Due to alcohol evaporation through the pores of the wood, the level drops. Therefore, the barrels are regularly topped up to prevent contact with oxygen. This creates a fresh, pure wine in which fruit and terroir take center stage.

Vinification and maturation

This white wine is made without additives. The wine then matures for eighteen months in oak barrels and a concrete egg. The work in the cellar is carried out with great care, after which the wine is given all the time it needs. The winemakers prefer to use indigenous yeasts, allowing the terroir to be expressed.

The wine matures on the lees in used 228-liter barrels that are four to fifteen years old. This is followed by bottling without prior fining or filtration.
