Description
Savagnin Elevage Long, Labet, Côtes du Jura. This biodynamic Savagnin stands out with its crystalline gold color. Mineral citrus aromas, nutty notes, approaching a vin jaune. Energetic on the palate, with clean acidity that provides precise structure. A long finish with salty notes. Savagnin is also known as Traminer. This white wine is made from the Savagnin jaune and Savagnin vert sub-varieties.
This unique white wine comes from vines dating back to 1990. The La Chalasse vineyard covers just 1.1 hectares and features clay and blue marl from the Lias period. This wine was aged for an impressive 46 months in 228L barrels. "Ouillé" means the barrels are continually refilled until they are full. The wine is therefore not oxidatively aged, but it does have hints of oxidative aging. This wine comes from the sun-drenched vintage of 2015. No sulfites added.
Julien Labet brilliantly highlights the Jura terroir of clay and blue marl in this rare wine , a true jewel of his expertise. This wine belongs to the " Les Insolites " series.

Labet, legendary winery
Domaine Labet, located in Rotalier in the southern Jura region (Sud-Révermont), is one of the finest Jura wine producers . This small wine region, east of Burgundy, is relatively unknown. Today, Jura wines, especially those from the best winemakers, are highly sought after worldwide .
Jura, a wine region rich in tradition
 The Jura is a relatively small wine region: approximately 2,000 hectares. Yet, it boasts a very old winemaking tradition, with a wide variety of styles. The traditional Jura style is oxidative, more or less like that of sherry and Madeira. The barrels are not filled to the brim to allow for air circulation. The label often says "Tradition" or "Voilé" in this case.
 If the label says "Ouillé ," the barrels were filled during aging. Alcohol evaporates through the wood, lowering the level in the barrel. Topping up (ouiller) prevents air from entering and prevents oxidation.
Close to nature
Domaine Labet used to produce wines in the classic style. These days, they're increasingly making natural wines (which is actually even more classic, of course). Labet operates entirely organically, with a separate biodynamic and natural wine line. Julien learned the winemaking trade at Domaine Ramonet in Chassagne-Montrachet and Hamilton Russell Winery in South Africa (both excellent wineries). Since 2015, the wines have been sulfited to a minimum.
Labet wines are world-renowned and sought-after, and are mainly sold on an allocation basis.
