So a very big wine , with an enormous complexity. Many a winemaker from Burgundy will be very jealous! Deep, mineral, and very long.

Fermentation and maturation in oak barrels of 228 liters, 24 months, with 20% new wood. The chalky clay soil gives rich, big Chardonnay wines with a lot of width and filling. Also beautifully dry with a superb balance between reduction and maturation. Moreover magnificently complex, with fra î cheur and minerality. Full of ripe yellow fruit such as yellow apple, pear. And also rich in spices. Only 5000 bottles made.

Chardonnay Les Bruyères, small vineyard, big wine

Les Bruyères is an old vineyard with marl and clay and a subsoil of blue marl (Triassic, 250-200 million years old). This clay soil produces richer, big wines with more volume. The clay-limestone terroir of Les Bruyères, facing south, is planted with old Chardonnay vines (50-80+) in the Jura appellation Arbois. This vineyard is less than a hectare in size.

Domaine A&M Tissot, rich history

The wine estate, now managed by Stéphane Tissot and his wife Bénédicte, was founded in 1962 by André and Mireille Tissot, in Montigny-Les-Arsures near Arbois. Their vineyards now cover 50 hectares, farmed organically since 1999 and biodynamically (Demeter certification) since 2004. This healthy and gentle farming allows Stéphane Tissot to get the best out of his vines. And to produce many cuvées per plot, which reflect the different terroirs as best as possible.
André and Mireille Tissot started in 1962 with 2 small hectares of vines, which André had inherited from his father. To distinguish himself from his three brothers, also winemakers, André added his wife Mireille's first name to the winery. Perhaps a detail, but it was an important gesture in the macho 1960s.

Long struggle with his father

In 1989, son Stéphane completed his viticulture studies in Beaune. This globetrotter, who spent a lot of time in Australia and North Africa, takes over the wine estate. His Burgundian education, combined with a perfect understanding of the rich terroir of the Jura and its soils, allowed him to quickly apply a terroir style to the winemaking. This is how Curon, Château-Chalon, Les Bruyères and La Mailloche were born.
Stéphane is constantly looking for ways to let the terroir 'shine' in his wines. This search for authenticity led to organic viticulture. After a long battle with his father, Stéphane succeeded in implementing his philosophy in 1999. That year, the entire wine estate became organic. Five years later, the official biodynamic Demeter certification followed. Everything is done to make wines that are as pure as possible.
Stéphane Tissot is the name people associate with Jura wines. That’s because he’s a benchmark for local styles and grape varieties, a torchbearer for the natural wine movement, and a source of wines that have brought the Jura into the global wine discourse. That’s why ‘Les Bruyères’ was the single-vineyard wine that inspired renowned winemaker Guillaume d’Angerville (Volnay, Burgundy) to start making wine in the Jura and launch Domaine du Pélican.
