A&M Tissot, Crémant du Jura BBF, Arbois, Jura . Stéphane Tissot demonstrates with this 'BBF' (Blanc de Blancs élevé en Fût) the great potential of the Jura, also for sparkling wines. This is a 100% Chardonnay , a blend from two harvest years. Disgorged in 2022.

Tissot, Crémant du Jura BBF vinification
Destemmed, gentle pneumatic pressing, light settling (débourbage). Spontaneous fermentation in barriques and matured for 1 year. After the second fermentation in bottle (prise de mousse) the wine matures for at least 52 months sur lattes .
Beats many Champagnes. Easily.
BBF is not a full-bodied or broad sparkling wine. But very refined and deep, rich and complex. Lots of tension, toast, brioche, apples. Orange peel, wild berries, chalky minerality and flint. Officially Extra Brut but in fact completely without dosage . This crémant is one of the best sparkling wines in the world, including Champagne.
