Tissot, Crémant du Jura BBF vinification

The Chardonnay grapes are first destemmed. Then, they are gently pressed pneumatically, followed by a light settling (debourbage). This is followed by spontaneous fermentation in barriques and a year of aging in barrels. After the second fermentation in the bottle (for the prise de mousse ), this sparkling wine is aged for at least another 52 months sur lattes (literally, "sweetened"). This extended aging on the lees (dead yeast cells) creates tremendous depth.

Beats many Champagnes. Hands down.

Tissot's BBF isn't a full-bodied or expansive sparkling wine. It's rather refined and deep, rich, and complex. Plenty of tension, toast, brioche, apples, orange peel, wild berries, chalky minerality, and flint. Officially Extra Brut , but in fact entirely dosage-free .

Taste
Orange peel, wild berries, chalky minerality and flint dominate lushly on the nose. Lively and creamy attack, playful in the mouth, freshness with mineral and spicy flavors. Precise and super clean.
