A&M Tissot, Crémant du Jura BBF, Arbois, Jura . Stéphane Tissot demonstrates with this 'BBF' (Blanc de Blancs élevé en Fût) the great potential of the Jura, also for sparkling wines. This is a 100% Chardonnay , a blend from two harvest years. Disgorged in 2023 .

Tissot, Crémant du Jura BBF vinification

The Chardonnay grapes are first destemmed. Then follows careful pneumatic pressing, plus light settling (débourbage). Then spontaneous fermentation in barriques and 1 year maturation in barrel. After the second fermentation in bottle (for the prise de mousse ), this sparkling wine matures for at least 52 months sur lattes . This long maturation on the lees (dead yeast cells) ensures enormous depth.

Beats many Champagnes. Easily.

Tissot's BBF is not a full-bodied or broad sparkling wine. But very refined and deep, rich and complex. Lots of tension, toast, brioche, apples. Orange peel, wild berries, chalky minerality and flint. Officially Extra Brut but in fact completely without dosage .
