Description
A&M Tissot, DD, Arbois, Jura, France . Refined dry red wine. Surprisingly light in color yet incredibly flavorful. Precise and concentrated, distinctive and unique, with delicate redcurrant, cherry, tea, pencil lead, a pleasant kick of tannins, and invigorating acidity.
 This is a complex biodynamic natural wine , bottled without sulfites . A blend of Pinot Noir, Trousseau, and Poulsard . Trousseau and Poulsard (also known as Ploussard) are unique red grape varieties from the French Jura region.

Tissot DD: an ode to old wine tradition
 For Bénédicte and Stéphane Tissot from Arbois, 'DD' is an ode to the ancient tradition of red winemaking in the Jura. The three grape varieties, Pinot Noir, Poulsard, and Trousseau, ferment together in large vats—old (hundred-year-old) foeders.  
The whole bunches of grapes—including the stems—are steeped in the must for a full three months of maceration! They then ferment spontaneously without further intervention. Finally, the wine is racked and bottled after several months of aging, unfiltered and without sulfites.
In short, this is a wild, untamed natural wine . But from the hand of the absolute grandmaster Stéphane Tissot. The yield per plant is very low. Fortunately, Tissot produces enough, as they now cultivate a total of 50 hectares of vineyards.
