A&M Tissot, DD, Arbois, Jura, France . Refined dry red wine. Surprisingly light in color yet very flavorful. Precise and concentrated, separate and unique, with fine currant, cherry, tea, pencil, nice kick of tannins and stimulating acids.
This is a complex biodynamic natural wine , bottled without sulphites . Blend of Pinot noir, Trousseau and Poulsard . Trousseau and Poulsard (also known as Plousard) are unique blue grape varieties from the French Jura.

Tissot DD: ode to old wine tradition

For Bénédicte and Stéphane Tissot from Arbois, 'DD' is an ode to the old wine tradition of making red wine in the Jura. The three grape varieties Pinot noir, Poulsard and Trousseau ferment together in old (hundred-year-old) vats. The whole bunches of grapes soak in the must for a long time, a maceration of up to three months! Then they ferment spontaneously without further intervention. Then the wine is racked and bottled after a few months of maturation, without filtering or sulphites.

In short, this is a wild, untamed natural wine . But from the hand of absolute grandmaster Tissot. The harvest per plant is very low. Fortunately, Tissot does make enough because they now work a total of 50 ha of vineyards.
