Tissot, Poulsard Amphore

The grapes for this Poulsard Amphore come from vines planted between 1942 and 1972 on various ancient claystone deposits near Montigny and Arbois .

The grapes are destemmed by hand. Tissot gives this Poulsard (Ploussard is also allowed) a 3-month long, static maceration - soaking of the grapes. After spontaneous fermentation, the wine matures in earthenware amphorae (400l). These are air-permeable and stabilize the wine. Finally, the wine is bottled unfiltered, unclarified and without sulphites . This way of maturing in amphorae reinforces the special delicate character of the fruit.

Poulsard, an outsider with enormous refinement

Poulsard or Ploussard is a typical grape for the Jura. The skin is thin and gives off little colour and tannins when macerated. This maceration can therefore be quite long to achieve perfect extraction of the delicate floral and red fruit aromas.
Due to the thin skin and early sprouting, the grape is quite sensitive to diseases and frost. This therefore requires a lot of control by the winemaker.

Fine red fruit: currant, wild strawberry, raspberry. Also deeper notes of blackberry. Floral notes and slightly spicy. All very delicate and subtle. Earthy. Fine acids, bitters and tannins. Long.

Interesting
Poulsard is also called Ploussard. It is, together with Trousseau, a typical Jura grape. There is also a little in Bugey (Savoie).
