Tissot, Savagnin Amphore, Jura . This is a unique, complex orange wine from the Savagnin grape (aka Traminer). Candied oranges and the fine tannin structure make this an amazing wine. Nose of marmalade and orange zest, quince, apricot, hay, sweet herbs like cinnamon, vadouvan, nutty. Original, fine and complex on the tongue, with good length.

Vinification of Tissot, Savagnin Amphore orange wine.

Manual harvest and destemming. Then in 420 liter amphorae without sulfur (SO2). The grapes first soak for 4 months (!) - this is called maceration . So even before fermentation. This allows the aromas and flavors to be drawn from the skins of the Savagnin grapes and also some tannin to come with it. Only then does a soft pressing follow. After fermentation follows 3 months maturation in amphorae with topping up (ouillage). Bottled unfiltered with no added sulphur.

Vinification and maturation at Tissot take place in the same amphorae of baked clay. The colour is almost orange due to the long contact with the air. This makes the aromas and flavours, which develop over a few days, beautifully complex and long. Therefore this tip: follow the wine a few days after opening. Give this Jura wine some air ( carafe ) if you drink it young.

This wine ferments and matures in baked clay amphorae (quevri). This is a millennia old technique that was also used by the Greeks, Romans and the Caucasus. The result is an orange wine, a natural wine.
