Tissot, Savagnin Dévoilé 'La Vasée', Jura. Rare wine from top winemaker Stéphane Tissot. Wine from the vineyard La Vasée in the appellation Arbois in the Jura. This is a so-called ' Tradition' wine, so an oxidatively made wine from Savagnin grapes. Beautiful combination of dried fruit, nuts, freshness, tension and sensation!

Voile, the secret of Jura wines
In the normal way of making wine, the winemaker fills up the oak barrels. Wine slowly evaporates from the barrel via the wood. To prevent oxidation (and vinegar formation) you have to fill it up (ouiller in French) with wine from other barrels. In the Jura (and in Jerez, Spain) they don't always do that. Such a wine is non-ouillé .
As with sherry, a fairly thick, greyish layer of yeast cells forms that floats on the wine. And then seals it off from the air above. This layer is called the voile (veil) in the Jura and flor in Jerez.
The result is stunningly beautiful! Think of dried fruit of apricots, dates and figs, raisins. With a good dose of hazelnuts and walnuts, morels and earthy scents of wet forest. Looks a bit like fino sherry but is still different.
Savagnin is also known as Traminer.
