A&M Tissot, Traminer ouillé, Arbois, Jura . Traminer blend (cuvée) from multiple vineyards and different barriques (from new to very old). This provides enormous complexity in the wine. Apricot, herbs, fresh with fine bitters. This white wine is reductively raised (ouillé) and can age wonderfully. 2 years in barrique, small part new.
Wine for storage par excellence but also very exciting when young. Great wine , with tension and elegance, beautiful structure due to acids and enormous depth. Wow!

Traminer is Savagnin

Traminer is an old, local name for the grape variety Savagnin, which Stéphane chose as a tribute for this wine. The Traminer / Savagnin is raised here reductively with the so-called ouillé technique. In this technique, the barrels are constantly refilled to prevent oxidation by oxygen. This is in fact the standard way of making wine worldwide.
The Jura is also known for white non-ouillé wines, not filled up. These wines get an oxidative sherry-like, nutty taste. This can be from both Savagnin and Chardonnay. The label often says Tradition .

Tissot is a common family name in wine growing in the French Jura.

Bénédicte and Stéphane Tissot believe that in a good wine you can recognize the personality and character of the winemakers. Because every action, every decision has an impact. Taste
Nice concentration and intensity. Apricot, herbs, fresh with fine bitters, length. Has everything you expect from a dry Savagnin. Clean, nicely dry, serious and really tasty.

Fish, shellfish and poultry, sweetbreads, white and red mould cheeses

Interesting
Tissot deliberately uses the old name Traminer, while the grape in the Jura is normally called Savagin. This is the Gelber Traminer. There is also Roter Traminer.
