Bouard-Bonnefoy, Aligoté, Burgundy . French white wine. Refined nose with ripe white fruit of apple, pear, and peach, along with a touch of smoky oak. Wonderfully fresh, with juiciness, yellow fruit notes of apricot and melon, and good balance. Long finish with toasted notes and delicate bitters of lemon zest. Sustainably made vegan wine , without pesticides or herbicides and virtually sulfites.

Little secret: Bouard-Bonnefoy is a purveyor to Burgundy superstar Pierre-Yves Colin Morey. Under its own name, Bouard-Bonnefoy also produces several affordable, exceptionally pure, and precise white Burgundies. Like this magnificent Aligoté.
Aligoté doesn't have the reputation of the much more famous Chardonnay. But these days, Aligoté is becoming increasingly popular. Fabrice Bouard and his daughter Clara , for example, are brilliantly demonstrating that Aligoté can be used to make stunningly beautiful white Burgundy. Chassagne-Montrachet is their specialty. But this wine family also produces other fine cuvées.

What makes Bouard-Bonnefoy special is their winemaking method: steeped in tradition and respectful of nature. A truly classic process. For example, they still press the grapes in an old wooden vertical press. A technique now only seen in Champagne, but one that defines Bouard-Bonnefoy's wines, giving them their pure character.
