Domaine Gauffroy, remember that name
All wines from Domaine Gauffroy are "handcrafted." The wines undergo no additional treatments, so fermentation is spontaneous and no enzymes are added. The ratio of old and new oak is strictly balanced, and the wine is given time to develop. The goal is to produce terroir-specific wines in the Burgundian tradition. Nicolas Gauffroy is now the third generation chef and works with his mother, a close friend (his father passed away in 2024). His white wines are classic Burgundian: fresh and with excellent aging potential.
