Domaine Gauffroy, remember that name
All Gauffroy wines are 'handmade'. The wines do not undergo any additional treatments, so the fermentation is spontaneous and no enzymes are added. The ratio of old and new wood is strictly balanced and the wine is given time to develop. The aim is to make terroir-typed wine in the Burgundian tradition. Nicolas Gauffroy is now the 3rd generation 'chef' and works with his parents and good friends. His white wines are classically fresh with a lot of aging potential.
