Domaine Gauffroy, fast-rising talent
All wines from Domaine Gauffroy are "handcrafted." The wines receive no additional treatment. Fermentation is spontaneous, and no enzymes are added. New oak is used sparingly alongside older barrels. The wine is given ample time to develop. The goal is to produce terroir-specific wine in the Burgundian tradition.
Nicolas Gauffroy is now the third generation chef, working with his mother and close friends. His white wines are classic Burgundian: fresh yet rich, with excellent aging potential.
