Description
Bouzeron, Ramonet, Burgundy, Côte Chalonnaise . This spicy white wine is beautifully focused. With green apple, lemon zest, herbs , white flowers, freshly baked bread , and salty notes. Balanced and refreshing, this should develop well over the next ten years. Nowhere does Aligoté , unfortunately still an underrated grape, truly shine more than in Bouzeron. And that's where Jean-Claude Ramonet's is at its finest.

Ramonet, world-famous winery
 In the early 1920s, Pierre Ramonet , grandfather of the current owners and brothers Noël and Jean-Claude Ramonet, arrived in Burgundy. Pierre Ramonet laid the foundation for Domaine Ramonet's great reputation. In the early 1930s, he began making wine in Chassagne (Chassagne-Montrachet, Côte de Beaune) with the purchase of Les Ruchottes.
 
Today, the two grandsons are responsible for the wine estate. They run Domaine Ramonet in the tradition of their father and grandfather. And they make fantastic wines here! With the utmost care and attention to the Aligoté, Chardonnay, and Pinot Noir grapes are used for vinification. And only from vines that are at least 18 years old. These vines are now quite old (an average of 60 years old), and the yields per hectare are very low.
 Fermentation takes place in stainless steel, followed by maturation in oak barrels. The wines are aged for between 12 and 15 months in new and used oak barrels (usually 30% new oak). Long maturation takes place on the lees, with only occasional batonnage followed by light filtration. Noël is generally responsible for the cellars, and Jean-Claude for the vineyards.
AOC Bouzeron, a unique appellation
Bouzeron is a small wine-producing village in Saône-et-Loire, part of the Bourgogne-Franche-Comté region. Bouzeron is known for its excellent wines. The soil is rich in limestone. This part of Burgundy, just south of Santenay, Chassagne-Montrachet , and the Côte de Beaune , is called the Côte Chalonnaise. Bouzeron is one of five village appellations.
 Where Bouzeron now stands, there was already a camp in Roman times and later a monastery. In the ninth century, Charles the Bald donated the village to the Abbey of Saint-Marcel-lès-Chalon. This monastic order already had a branch in the village. Later, several monks settled in Bouzeron, specializing in wine, which gave the village its name of hermitage .  
Today, just over a hundred people live there, the majority of whom make their living from wine growing. The best wines from Bouzeron are classified as the AOC Bouzeron , a designation they have been allowed to use since 1998. Uniquely, this is the only AOC with a village appellation valid for the Aligoté grape variety.
