Chardonnay Les Champs Rouges, small vineyard

This white wine is called Les Champs Rouges because it comes from a small plot of 1.3 hectares with a soil of red clay (ferrous). Underneath lies rock of limestone from the Bajocian (Jurassic period), typical of the South Jura. And ideal for Chardonnay . The vines are more than 45 years old. Labet keeps the yield low on purpose.

Long maturation of 4 years!

Fermentation occurs spontaneously, so with yeasts present in the cellar and on the grape. The wine matures for 12 months on the lees (dead yeast cells) in 3 to 4 year old oak barrels. These barrels are filled up when the level drops due to evaporation (ouillage). In total, this unique rare wine even matures for 4 years in barrels .

Labet is located in the village of Rotalier , in the Sud-Revermont region. This southernmost part of the Côtes du Jura appellation has a slightly different chalky soil than around Arbois, located further north. The Chardonnays here get a characteristic minerality (fine acids and bitters, earthy aromas of wet stone). Another world-famous winery is also located in Rotalier: Ganevat .

Interesting
The limestone soils around the wine village of Rotalier are different from those around Arbois. This gives the Chardonnay and Savagnin wines a characteristic minerality: lots of tension and finesse.
