Terroir Jurançon
Siliceous clay soil, with layers of silt, sand, clay and pebbles. The vineyards are located at 250 to 325 meters, at the foot of the Pyrenees. Both Petit and Gros Manseng have a thick skin. This makes them resistant to mildew and downy mildew. In addition, the wind from the mountains ensures that the grapes dry again quite quickly after rain. So that also helps against rot.
This also means that the harvest here is quite late, between October 25 and November 10. Together with the higher altitude, this means that the difference between day and night temperatures is quite large. The grapes ripen well, but also retain their acids.
Viticulture
The vines are on average 25 years old. Camin Larredya works biodynamically . But without certification. Because they buy part of the grapes for this wine from friends. Hence "les grains des copains" in the wine name. The harvest is manual with a low yield of approx. 30 hl/ha. The grapes for this wine are ' passerillées ', slightly dried, without botrytis / noble rot.
Vinification
Camin Larredya uses the entire bunch , without destemming. 2/3 of the grapes go directly into the press. The rest is macerated for 48 to 72 hours. This extracts extra aromas and flavours. The must ferments spontaneously in barrels of 225l (5% is new) and in large foeders of 1200 to 2500l. The alcoholic fermentation is temperature-controlled. The dessert wine does not undergo malolactic fermentation. This preserves the fruity freshness.
The wine then matures for another 6 months on the lees, which are also stirred ( batonnage ). This gives the wine roundness. In the summer, the wine is left to rest. Then this beautiful dessert wine is bottled.
