Malvasia, Malvazija, ancient wine grape

Malvasia has ancient origins. It's found throughout the Mediterranean and originates from the Peloponnese around Monemvasia in Greece. The Venetians brought Malvasia grapes to northwest Italy. At that time, Istria was still part of Italy.

The soil consists of Flysch, a sedimentary, layered rock, and limestone. Ideal for quality wines. Locally, this is called "Soudan." The vines are Guyot pruned with a maximum of 4,000-6,000 plants per hectare. This allows each vine to yield a maximum of 1.5 kg of grapes.

The Malvasia grapes for this wine come from a 30-year-old vineyard on a western slope. They were picked late—thus ripe—and macerated for a month (the grapes soak in the juice). So, essentially, just like you would make a red wine.

Then comes the pressing. Fermentation occurs spontaneously. It is then aged for a year in oak barrels. Bottled without filtration, which gives this wine its deep yellow color.

Saxida, a heavenly winery

The Saxida winery – owned by the Saksida family – is located near the village of Zalošče, in the heart of the Vipava Valley . The beautiful vineyards, with their well-tended vines, are situated at the top of the Vipava River Valley. It's an hour's drive from the Slovenian capital Ljubljana, about 30 minutes from Trieste, and an hour and a half from Venice.
