Traminer Profund, Herbert Zillinger

Dry white wine from Austria, from the Weinviertel wine region. Biodynamic wine from Herbert Zillinger. Traminer Profund is a white wine with—what's in a name?—enormous depth. Only the very best grapes are used for Profund. Some are co-fermented (Maischevergoren), while the rest undergoes a short maceration (Maischestandzeit). This creates minerality and further extracts aromas from the skins.

The must ferments spontaneously without prior filtering or clarification. The wine ferments first in stainless steel and then further in large oak barrels. The wine is then bottled unfiltered and with minimal sulfites. Traminer is the same as Savagnin, the grape variety's name in the Jura region.
