Profund means depth or profundity. This Austrian wine certainly has that! Rich, full, dry white wine with endless layers. Master of Wine Jancis Robinson is completely crazy about it (see below) . Traminer Profund, Herbert Zillinger

Dry white wine from Austria, from the Weinviertel wine region. Biodynamic wine from Herbert Zillinger. Traminer Profund is a white wine with -what's in a name- enormous depth. Only the very best grapes are used for the Profund. A part ferments along (Maischevergoren), the rest gets a short skin maceration (Maischestandzeit). This ensures minerality and more extraction of aromas from the skins.

The must ferments spontaneously without prior filtering or clarification. The wine first ferments on stainless steel and then further on large wood. The wine then goes unfiltered and with minimal sulphites into the bottle. Traminer is the same as Savagnin, as the grape is called in the Jura.
