Aviet, Caveau de Bacchus
Caveau de Bacchus (only 6 ha) has a small production and sells most of its wine bottles locally around the pleasant wine town of Arbois. Aviet has an excellent reputation.
Father Lucien (known locally as Bacchus ) has been a winegrower since 1961. Son Vincent is now in charge. Lucien is retired but can still be found regularly at the wine estate. For example, to have wines tasted in the cellars. These wine cellars are full of old, very well-maintained casks.
Caveau de Bacchus works in the vineyards according to the modern lutte raisonnée (literally; rational fight - against all kinds of diseases and plagues). But in the cellar very traditional, with grape-own yeasts. Maturation and spontaneous fermentation take place in foeders. Some wines are transferred to older barriques or demi-muids after the malolactic fermentation to mature further.
The bottles, always decorated with a wax seal, all have the same label. The difference is in the neck label . For example on the Ploussard and Chardonnay 'Cuvée des Docteurs', tribute to medical students from Besançon, who help with the harvest.
This Trousseau 'Cuvée des Géologues' is named after the geologists who helped Lucien Aviet map the terroirs of the vineyards. You're lucky if a small side label also mentions the exact vineyard!
