A&M Tissot, Crémant du Jura BBF, Arbois, Jura . With this "BBF" (Blanc de Blancs élevé en Fût), Stéphane Tissot demonstrates the Jura's great potential, including for sparkling wines. This is a 100% Chardonnay , a blend from two vintages. Disgorged in 2022. Last bottle of the year!

Tissot, Crémant du Jura BBF vinification
Destemmed, gently pneumatically pressed, and lightly settled (débourbage). Spontaneous fermentation in barriques and aged for one year. After the second fermentation in the bottle (prise de mousse), the wine is aged for at least another 52 months sur lattes .
Beats many Champagnes. Hands down.
BBF isn't a full-bodied or broad sparkling wine. It's very refined and deep, rich, and complex. Plenty of tension, toast, brioche, apples, orange peel, wild berries, chalky minerality, and flint. Officially Extra Brut , but in fact entirely dosage-free . This crémant is among the finest sparkling wines in the world, including Champagne.
