Beautiful Pinot Noir from wine talent Matthias Gaul. Wine magazine Vinum and wine guide Eichelmann are enthusiastic about Gaul. Declared the most beautiful Spätburgunder in its price range by Perswijn. From stony limestone soil with clay. And also from selected vineyards in Asselheim, located at approximately 200 meters altitude and south-facing.

Vineyard and harvest

Gaul halves the grape bunches on the vine to promote better air circulation between the individual berries and thus improve quality. He also performs extra manual selection and thinning during the ripening process, directly on the vine. But the final selection takes place during the harvest, which is done manually in small bins in the autumn.

Vinification

Traditional open fermentation method where the must (juice and grape skins) is regularly submerged by hand with a punch-down tool (pigeage). After the fermentation period, the wine matures for at least 12 months in French barriques (225 liters), which are new to a maximum of 5 years old.
