Rare red Pinot Noir wine from a small vineyard planted with vines from 1985 and 1986. Located east-facing at an altitude of 260-280 meters, Julien Labet has planted four different Pinot Noir clones. Along with his brother and sister, he demonstrates considerable talent!

About 80% of the grapes were whole bunches during vinification. Spontaneous fermentation. This red wine was aged for nine months in 228-liter oak barrels. The soil is red clay and flint on limestone (Bajocian).

Labet also proves that it produces perhaps the best red wines of the Jura.

Julien Labet learned to make wine at Ramonet in Burgundy

Julien Labet learned how to make high-quality white wines at the world-famous Domaine Ramonet in Burgundy. Ramonet uses classic aging in small barrels (pieces) on the lees (yeast cells). Combined with phenomenal viticulture, this produces wines of enormous energy and complexity.

Julien went a step further, becoming one of the first in the Jura to ferment and bottle parcel by parcel, rather than blending everything. This blending still occurs for some of his wines. But he found many of the old vineyard parcels so fascinating in their own right that they screamed for their own bottling. This series is called Les Parcelles Rares , the rare parcels.
Domaine Labet's wines are both traditional and modern. Labet primarily produces white wines in topped-up (non-oxidative) barrels, à la Bourgogne, in neutral 228L barrels on fine lees. Occasionally, however, they also produce the oxidative "vin de voile" style traditional to the Jura, aged in old foudres. Red wines are usually destemmed and aged in oak barrels or larger old foudres.
