Herbert Zillinger, biodynamics at its best

Herbert Zillinger's wines are more than worth discovering! World-renowned British Master of WineJancis Robinson has been a big fan of Zillinger for years. And rightly so. Besides the core Neuland and mid-range Horizont, he and his wife Carmen make some of the most distinctive Veltliners in all of Austria, known as Elementar and Radikal . He's also a champion of Traminer (aka Savagnin in the Jura), whose flagship wine is called Profund . You can find them all in our webshop.

All wines are biodynamically produced, with little to no filtration and minimal sulfites. Top sommeliers like Noël Vanwittenbergh (Ciel Bleu**) are happy to work with this method.

Zillinger is located in the village of Ebenthal , right on the Slovakian border in northeastern Austria. This is part of the so-called Weinviertel (Weinviertel) in the Lower Austria wine region. This is where mainly bulk wine and simple Veltliner wines are produced. But there are also fantastic exceptions, such as the delightfully headstrong Herbert Zillinger.

Nature first

Herbert Zillinger leaves conventions behind and trusts his intuition and nature. He combines Austrian winemaking tradition with international experience, as long as it remains natural. He trusts the strength of his grapes and his philosophy, which is close to nature; because what hasn't fully ripened on the vine can't produce good wine later in the cellar. Yet, much depends on the working methods in the cellar, which is why he uses modern techniques very thoughtfully. He refuses to conform to conventional methods. Herbert doesn't make trendy world wines, but unique wines with intensity and character. Wine is his passion, his life.
Herbert and Carmen don't compromise. They make unique wines, with a distinct profile, structure, and unique selling point. Wines where you can see their signature and the soil where their grapes grow. They never tailor their wines to a promising company or a better rating. The wines stand for themselves.
The idyllic wine village of Ebenthal lies in the gentle hills of the southern Weinviertel region. A landscape that surprises visitors with countless little discoveries, adventures... and great wines. There's a reason for this: the vines are planted on loess soil, a nutrient-rich soil composed of various rocks and minerals that allows the grapes to thrive. At the same time, the loess stores water very well, which is beneficial for the grapes, which need it in this dry and warm environment.
